Soup

I love drinking soup, so today, I will be posting about a vegan soup that is delicious:)

Leek Soup with Dill Oil

You can freeze this after letting it cool completely. In freezer bags. It's also worth mentioning that I've been enjoying leftovers of this over scoops of cooked farro. Brown rice would be great too.
1 small bunch of fresh dill ~ .5 oz / 15 g
9 tablespoons extra virgin olive oil
3.5 pounds / 56 oz / 1.5 kg leeks
6 tablespoons unsalted butter
fine grain sea salt
2 large, thin-skinned potatoes, thinly sliced
3 medium garlic cloves, thinly sliced
6.5+ cups / 1.5+ liters good-tasting vegetable broth, preferably hot
toasted almond slices, for topping
grated gruyere cheese, for topping
Use a hand blender or food processor to puree the dill and olive oil into a creamy green emulsion. Set aside.
Cut the dark, tough green leaves from the leeks, trim off the roots, and wash/rinse well. You can slice the leeks lengthwise to get inbetween the layers, or make a few rough chops and give them a quick soak, or whatever method you prefer. Use a food processor to chop the leeks in two batches. You can also chop them by hand, but I was in a pinch for time here, and the processor made quick work of this step.
In a large soup pot, heat the butter and 5 tablespoons of the dill oil over medium-high heat. When the butter has melted and is bubbling, stir in the leeks and a couple big pinches of salt. Stir well, then cover. Cook, stirring occasionally, until the leeks soften up and collapse, 6 - 8 minutes. Now, stir in the potatoes and garlic and cook, uncovered, stirring regularly, for another 15-20 minutes or until the potatoes are very, very soft. If the leeks at the bottom of the pot are getting too much color, dial back the heat a bit more and be sure to scrape the bottom of the pan when you're stirring. At this point you can mash everything with a potato masher or large fork. If you prefer a smoother soup, use a hand blender, but this soup is great a little on the chunky side. Stir in the hot broth, adjusting the amount based on whether you like a thick or thin soup. Bring back to a simmer, serve topped with almonds, grated cheese, and a generous drizzle of the remaining dill oil.
Makes a big pot - enough for 8 -10 servings.

In modern factory farms, animals are routinely injected with hormones and stimulants to make them grow bigger and faster. Many dairy ranchers use recombinant bovine growth hormone (rBGH) to enhance milk production, despite the fact that this chemical - which has been implicated in causing cancer and other diseases - shows up in milk. Feedlots are crowded, filthy, stinking places with open sewers and choking air. The animals would not survive at all but for the fact that they are fed huge amounts of antibiotics. In some farms, cattle are fed "renders" - dead and grounded up cows. To induce and increase egg production, chicken are kept in tight cages and kept awake under bright light 24 hours a day. Consider eating vegan and eliminating all animal products from your diet.

Hundreds of thousands of animals are poisoned, blinded, and killed every year to test shampoos, household cleaners, cosmetics, hair sprays, and other personal-care and household items. These tests are not required by law, and they often produce inaccurate or misleading results - even if a product has blinded an animal, it can still be marketed to you. Some corporations force substances into animals' stomachs and drip chemicals into rabbits' eyes. What goes on behind the doors of laboratories is horrific.
Animals are also unnecssariyly being trapped, caged, hurt, and even killed to make clothing, accessories, and furniture for human .


All the arguments to prove human superiority cannot shatter this hard fact: in suffering, the animals are our equals. - Peter Singer, Australian author, Animal Liberation.

Adopting a plant-based diet is one of the most important and effective acts anyone can take to make this world a better place.

Have you ever thought, "Man, I wish there was a vegan book with plant-based nutrition info, exercise routines, tips for eating affordably and curing your ailments, and recipes."? Oh, and maybe you want a little coaching in there too — you know, someone to kick you in the butt when you try to make excuses for why you can't eat healthily.

That book is real! It's called Power Veganby nutrition specialist and fitness trainer Rea Frey. This book literally contains just about everything you need to know about a maintaining a healthy vegan diet. It's for new vegans. It's for veteran vegans. And it's for the veg-curious. Often, these sorts of books are tailored to one group or the other, but everyone can get something out of this.

Like a good trainer, Frey is encouraging without being preachy. She includes chapters on power foods (with sections on sprouting and eating raw), eating vegan for life (including answers to all those common excuses for why you don't think you can eat healthily), curing ailments (foods and exercises to help with dry hair or nagging aches), workouts (with planned workout circuits and pictures demonstrating the moves), and recipes for healthy (but not over-the-top-healthy) meals .

Vegan Mushroom Bacon Swiss Burger!

Hey guys! This is kris posting, you like burger? But veggie? Here it is !





Vegan Mushroom Bacon Swiss Burger
-----------------------------------------------
1 tsp. olive oil
8 ounce package sliced button mushrooms
1 tsp. paprika
1/2 tsp. garlic salt
4 vegan burger patties
4 slices Daiya Swiss Style Slices
2 Tbsp. vegan mayo 
1/4 cup coconut bacon OR 1/4 cup crumbled vegan bacon
4 vegan hamburger buns

Heat the oil in a non-stick skillet. Add the mushroom slices, paprika, and garlic salt. Stir and saute for 7 to 10 minutes until mushrooms have cooked down and are soft.

Heat the burger patties in a skillet according to package directions. When the burger is cooked through on one side, flip and top with slices of Swiss. Place a lid or some type of cover over the skillet for a few seconds to allow the cheese to melt better.

To assemble, spread the mayo on the top halves of buns. Sprinkle the bacon over the mayo. Place the cooked burgers with cheese on the bottom halves of buns. Top with 1/4 cup mushrooms and top half of bun. Eat.

Even eating vegan part-time can benefit your health.

Vegans and those who avoid animal products (even part of the day, or part of the week) often have low rates of obesity, and on average weigh 5 to 20 percent less than meat eaters. Vegetarian diets on the whole are linked to lower BMIs, reduced risk of type II diabetes and lower incidents of cardiovascular disease. Furthermore, increased consumption of fruits and vegetables lower rates of certain cancers, especially colon cancer.

You'll get enough protein from plants.
According to traditional dietary standards, a 140-pound woman should have 50 grams of protein a day, and for a vegan that might come from a cup each of cooked spinach (5 grams), lentils (18 grams), and tempeh (a soy product with 41 grams). New recipe: Vegan Ice Cream(coconut flavour)
 I am an adventurous eater, especially when it comes to ice cream. So today, I am going to share out of my favorite flavor: Coconut. You can try it at home and is very simple to make. It only needs 3 ingredients :) Enjoy!

To freeze without an ice cream maker

No ice cream maker? No sweat.
You can make this without an ice cream maker, though it won’t be exactly the same consistency. Ice cream makers basically work by churning a ton of air into the mixture. If you beat the ice cream mixture by hand, it’ll be denser and a little coarser, because you won’t be able to get as much air into it by hand. That said, here’s what to do:
1. Make the coconut ice cream mixture.
2. Pour it into a large, freezer-safe bowl.
3. Freeze for about 30 minutes. Take it out of the freezer and whisk it briskly (or churn using an electric immersion blender). Return to the freezer.
4. Repeat step 3 every 30 minutes until your ice cream is creamy and frozen through.

3-Ingredient Coconut Ice Cream

2 (13-oz.) cans of coconut milk
1 3/4 cups sugar
2 teaspoons vanilla extract
Makes about 1 quart

Chill the coconut milk

When you make ice cream, you want to start with cold ingredients. It makes the freezing process that much easier. So, if you can, chill the cans of coconut milk for at least 4 hours before making your ice cream.

Blend the ingredients

Crack open your cans o’ coconut milk. Coconut milk naturally separates, so you’ll have a thick, white layer on top (which contains the fattier solids), and watery liquid below. That’s just fine.
Empty the contents of the cans into your blender. Scrape the can, get it all out.
(Bleh, right? Don’t worry. The blender will re-emulsify this mess into gorgeous, silky, homogenous coconut milk.)
Add the sugar and vanilla.
Blend until smooth.
It will look about like this when done. The bumps you see are bubbles.
Give it a quick taste. If you want to add extra sugar or more vanilla, now’s the time to do it. (If you want to add anything solid, like shredded coconut or mini chocolate chips, add those in the last 5 minutes of processing when you have it in your ice cream maker.)
That’s it. That’s your ice cream base. Pretty simple, right?

Process in your ice cream maker

Pour the mixture into your ice cream maker and process according to the manufacturer’s instructions.

When it’s done, transfer it to a freezer-safe container. I like to use 1-lb. bread pans. They hold a quart of ice cream nicely.
Smooth the top down with a spatula.
Press a piece of plastic wrap to the surface of the ice cream. Pop it into your freezer and freeze overnight or until solid.

Serve & enjoy!

This ice cream doesn’t really freeze rock solid, which means it’s pretty scoopable right out of the freezer. (No waiting? Yes, please!)

Enjoy!

This is delicious as a stand-alone treat. But, if you want to kick it up a notch, make a Mounds- or Almond-Joy inspired sundae. Drizzle with hot fudge and sprinkle with dark chocolate shavings and sliced, toasted almonds.

So mouth-watering good!

Crunchy, Chewy Flax & Almond Macaroons (Egg-Free)
Macaroons.You put one in your mouth,you chew it,and all the deliciously,juicy goodness flows out of its crunchy shells...

And now vegans can experience this heart-melting love as well!

This recipe takes 20 minutes of preparation time and 25 minutes of cooking time.

Ingredients(for 15 servings aka 30 cookies):
  • 7 tablespoons ground flax seed
  • 21 tablespoons water (1/3 cup with 1 tablespoon and 1 teaspoon)
  • 1 1/2 cups sugar
  • 5 tablespoons hot water (each tablespoon just shy of a full tablespoon)
  • 2 1/3 cups ground almonds
  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 10 drops almond essence
Directions:
  1. Whisk the ground flax seed and 21 tablespoons of water in a bowl and let it stand for at least 2-3 minutes before use.
  2. Using a hand mixer,beat the sugar and 5 tablespoons of hot water together in a large bowl for 2-3 minutes(allows some of the sugar to "melt").
  3. Gradually add the flax mixture from step 1 and all the remaining ingredients and mix well.
  4. Grease and flour a cookie sheet before placing the mixture in as 1 inch-wide balls of dough,each ball approximately 1 1/2 inches apart from each other.
  5. Bake them at 350F(176.67C) for 25-30 minutes.Remove promptly to a wire rack and eat whenever you want!
Side note: If you want them to be chewy,do not allow them to brown at the edges,or they will be tough "nuts" to crack!

PROS & CONS OF BEING A VEGAN!

This post might change your idea and become a VEGAN!!
Pros:
Veganism may reduce your risk of some diseases, planned and nutritionally suitable vegan diets may lower your risk of certain diseases. It is common for vegans to have lower BMIs than non-vegetarians, which lowers the risk of heart disease and other obesity-related conditions. Vegans have been found to have a lower rate of hypertension than other kinds of vegetarians, and soy-based vegan diets may slow the progression of kidney disease.

Going vegan also helps save animals and the environment. Animal abuse and animal rights are motivations for becoming a vegan. Some believe that livestock farming and animal agriculture has a negative effect on the Earth and has been linked to river and groundwater pollution, greenhouse gas production and acid rain.

Cons:
Vegans need to make a conscious effort to eat the right quantity and combinations of food to get the nutrients they need to stay healthy. Cutting out dairy may result in lower calcium intake, which may put you at risk for bone fractures. Vegans can use a little salt with iodine on their food or when they cook.

Vegans should eat iron-rich plant foods paired with vitamin C to improve iron absorption. Vegan sources of zinc and magnesium include whole grains, soy products, nuts and legumes. You may need to take vitamin supplements or find specific vitamin fortified foods to make sure you are getting enough vitamin B-12 and vitamin D. Omega-3 fatty acids, which are a key component of good health.

How is it like to be vegan?

Hi guys! How is everyone? Did you try out the recipes we posted? If you do, please do comment or send us a picture of what you made. Today, I will be talking about how is it like to be vegan. Personally, I am not a vegan, but a vegetarian on certain occasions. My parents are partially vegetarians. They cannot eat meat in the morning and cannot consume any meat products on certain times of the month. Hence, it is a bit inconvenient for them and for us. I know that going vegan means giving up alot of food, like eggs, milk, ice cream etc. However, have you thought about the benefits they bring you? Being vegetarian is already inconvenient enough, let alone being vegan. Also, you may think being vegan means there may be a lack of certain vitamins like calcium, iron etc. Don't need to worry, there are certain type of plants and vegetables that you can consume to replace the diary or meet products. FAMOUS VEGAN

Brad Pitt Is Vegan, but Angelina Jolie Is Not
Although Brad Pitt is vegan, and has been for a long time, his wife-to-be Angelina Jolie does not share his way of life.  “I was a vegan for a long time, and it nearly killed me. I found I was not getting enough nutrition,” she said.  This is a problem that plagues many people who try to go vegan, but don’t educate themselves on what types of foods they need for proper nutrition. Doing things like: drinking Vitamin D-fortified almond, coconut or soy milk, eating rice and beans, consuming nuts and seeds, securing a source of Vitamin B12, and lots of leafy greens help in ensuring proper nutrition.
Brad Pitt, on the other hand, hates red meat so much he gets annoyed whenever he witnesses Angelina eating it.  Since Brad Pitt is vegan, he also gets mad when he sees his children eating animal based products.  Jolie claims to have been initially inspired by Brad Pitt’s veganism, but now likes to joke that red meat is what gives her a great figure.

Cranberry-Orange Spiced Oatmeal

Feeling hungry and want to have a quick snack?
It only takes 7 minutes!
5 minutes to prepare and 2 minutes to cook!


Recipe for one serving:
  • 3/4 cup old-fashioned rolled oats
  • 1/2 teaspoon ground cinnamon, or to taste
  • 1/4 cup dried cranberries
  • 1/2 cup frozen blueberries
  • 1/4 teaspoon ground turmeric (optional)
  • 1 pinch ground ginger (optional)
  • 1 cup water
  • 1/4 cup orange juice, or as needed
Directions:
  • Place the rolled oats, cinnamon, cranberries, and blueberries in a microwave safe bowl.
  • Add the turmeric and ginger. (Optional)
  • Pour in the water, and stir to mix ingredients.
  • Cook on High until water is absorbed, about 2 minutes.
  • Add and stir the orange juice to desired consistency.

Hot Chocolate!!Mmm!!

Who says you need dairy milk to make hot chocolate?


This hot chocolate recipe makes use of soy milk and vanilla extract,so you can still enjoy your beloved hot chocolate!

Ingredients(this is for 2 servings):

2 1/2 cups soy milk
3 tablespoons white sugar
3 tablespoons cocoa powder
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 pinch ground cinnamon
1 pinch cayenne pepper

Let's brew!

Step 1:bring all the ingredients to a simmer in a saucepan over medium-high heat
Step 2:Remove from the heat and whisk until frothy and serve!

Takes only a total of 10 minutes to prepare and brew this deee-licious hot chocolate!

Testing cosmetics on animals

What are your views on Testing cosmetics on animals?
Do you think its right to use animals to test cosmetics?

Additional information: Vegans avoid using body care products that come from animals and even household cleaners that are tested on animals.

Using animal testing during the development of cosmetics may involve testing individual ingredients of a product on animals, often rabbits. They test the ingredients by applying the ingredients to the animals' eyes, nose and mouth, this is to determine if the ingredients will cause unwanted reactions. The testing will continue until development of the cosmetics is finished.

I personally feel that they should not have used animals to test the cosmetics. If you think of how much animals suffer, some even die just to allow us to have cosmetics (which is not a need in our life), I will not encourage people to buy cosmetics which use animal testing.

Strawberry Oat Squares

Before you say anything,no,it's not the oat squares you buy from the supermarket.

I have always pictured oats as something like plain cereal with absolutely no taste,but this recipe changed my perspective.

These oat squares are well-suited for a light snack,when your teeth "hunger" for food and you want a little something in your stomach.





Before we get started,here's a question to ponder on:

Ingredients(for 12-16 squares):


For Oat base:
  • 1.5 cups regular oats
  • 1 cup whole-grain Kamut flour (or mix of white and whole wheat)
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 cup Sucanat sugar (or brown sugar)
  • 1 chia egg (1 tbsp chia seeds+ 4 tbsp warm water, mixed)
  • 1/2 cup + 2 tbsp Earth Balance(butter spread), melted
  • 1/4 cup pure maple syrup
  • 2 tbsp almond milk
  • 1 tbsp sesame seeds/shredded coconut (for topping only)
For Strawberry Jam:
  • 2 & 1/4 cups chopped strawberries, chopped into 1/2 inch pieces/approx. 1 cup pre-made jam
  • 3-4 tbsp sugar, to taste
  • 1 tbsp chia seeds

Time to cook!


Step 1:Preheat oven to 350F(176.67C). Line a square pan (preferably a 9 x 9) with parchment paper and oil the sides of the pan and base. In a medium sized pot, add the chopped strawberries and sugar.

Step 2:Heat the pot over low until the strawberries begin to sweat and it gets a bit watery. Once it heats down a bit, add in the chia seeds, and stir well.

Step 3:Bring the pot to a boil and then simmer over low to medium heat for at least 10 minutes.(Here you may choose to add arrowroot powder to thicken up the mixture more) Once it has thickened a bit, remove from heat and cool for 5-10 minutes.

Step 4:In a large bowl, mix the oat base dry ingredients: oats, flour, Sucanat/brown sugar, baking soda, salt, and in a small bowl, mix the melted earth balance, maple syrup, almond milk, and chia egg.Stir each mixture well.

Step 5:Pour the mixture in the small bowl,while retaining 1/2 cup of the mixture,into the large bowl mixture,using your hands if necessary.

Step 6:Pour the mixture made from step 5 onto the square pan and press down the mixture with your fingers(you may choose to use a pastry roller to smooth it out).Pour the strawberry mixture(the medium sized pot) next and smooth it out.

Step 7:Sprinkle the retained 1/2 cup of mixture onto the square pan,followed by the 1tbs of sesame seeds or shredded coconut.

Step 8:Bake the square pan mixture in the preheated oven for about 30 minutes.After which,allow it to fully cool for 30-40 minutes before gently removing it from the pan

Step 9:Slice up the baked mixture and store it in a container in the fridge to keep firm,or just eat it straight away!

Vegan Chocolate Chip Cookie

Ingredients:

  ·         3/4 cup vegan sugar
  ·         1/2 cup vegan butter
  ·         1/2 cup canola oil
  ·         3 table spoon water
  ·         2 table spoon vanilla
  ·         2 1/4 cups flour
  ·         1 table spoon baking soda
  ·         1 table spoon salt
  ·         1 cup vegan chocolate chips

Steps:

  1.    Preheat oven to 375 degrees Fahrenheit.
  2.    Stir together sugar, butter substitute, canola oil, water and vanilla and mix well.
  3.    Stir in the flour, baking soda, salt and vegan chocolate chips.
  4.    Drop one tablespoon of batter at a time on to a baking sheet and bake for 8-10 minutes, or until golden   brown around the edges.

Lots of good vegetarian places can be found in Chinatown, but this is by far the best. They have a menu for cheaper priced foods, and one with more expensive dishes. Having tried a lot of them, all are really impressive. If you're anywhere near Chinatown, this is a place you should be going to!  Be warned, this place can get feverishly busy during the peak eating times, and seats can be hard to come by!

You must try any of the noodle dishes, as there is nothing like fresh handmade noodles. But it doesn't end there, they have countless other dishes all of which are very credible, in particular the sweet & sour pork.  Also keep a look out for their weekly and daily specials that are written on the whiteboard, near the cashier.

This place used to be located near the popular marine parade, now is at the below address. It offers a blend of Chinese and Western cuisine to choose from. Both are of a very high standard. It has a wide variety and selection of foods to choose from, all at a reasonable price. Having visited this establishment several times, and ordered countless dishes - I can conclude that it produces some of the most consistently excellent food in the island of Singapore. Their herbal soups are a particular gem.

There wasn't much of a debate as to which was coming first. This is number one by a long long stretch. It is a place I must have gone to around 50 times, and everytime I am in awe of how good the food is. The menu is vast, and having tried almost everything on it, I can honestly say every dish I have tried is above average - That is quite a feat. What's more impressive, is these fragrant North Indian curries are cooked without onions and garlic. Whether you like or hate Indian food, you owe it to yourself to experience this cuisine. Good value and unbeatable quality, simply the best.
