Winter Minestrone


Hi everyone! Today is Monday so how is everyone's Monday Blues? The weather is a little cold and I believe most people are sleepy and gloomy. Hence, today, i will post a recipe that is best suited for this weather: Winter minestrone! It is warm and filling, as well as easy to make. Do try it out! I am sure you will like it :)


Note: It is for 4 people
Ingredients:
  • 1 onion, chopped
  • olive oil
  • 1 garlic clove, sliced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 400g tin chopped tomatoes
  • 400g tin borlotti beans
  • 600ml vegetable stock
  • 100g kale, washed and chopped
  • crusty bread, to serve 
Method: 
  • Cook the onion in a tbsp olive oil until softened then add the garlic, celery and carrot and cook for a minute. Add the tomatoes, beans and stock, then simmer for 20 minutes. Add the kale and simmer for another 10 minutes then serve with crusty bread.
