HEALTHIER BROWN RICE!

Ever wondered how you could add "healthy" to brown rice while keeping the "delicious"?
Brown rice, roast pumpkin and seed salad

Well,this is how you do it!

Here's what you need:(note:these ingredients make up 6 servings)

Olive oil spray
1 kg Kent pumpkin, peeled, de-seeded, cut into 2-3 cm pieces
400 g (2 cups) long-grain brown rice
60 g (1/3 cup) pepitas (pumpkin seed kernels)
55 g (1/3 cup) sunflower seed kernels
80 ml (1/3 cup) fresh lime juice
1 tablespoon soy sauce
1/2 teaspoon sesame oil
1 small garlic clove, crushed
1/4 teaspoon brown sugar
1 bunch rocket, washed, trimmed, leaves torn

Cooking Time!


Step 1: Preheat the oven to 200°C and spray a large baking tray with olive oil to lightly grease.  

Step 2: Arrange the pumpkin pieces, in a single layer, on the prepared tray and spray lightly with olive oil.

Step 3: Bake the tray in the preheated oven, turning the pumpkin pieces halfway through cooking, for 30 minutes or until light brown and tender.

Step 4: Remove the tray from the oven and set it aside for 15 minutes to cool to room temperature.

Step 5: While waiting for the tray to cool, cook the rice in a large saucepan of boiling water for 30 minutes or until tender.

Step 6: Drain the rice in a large colander and set it aside for 30 minutes to cool to room temperature.

Step 7: Reduce the oven temperature to 180°C.

Step 8: Spread the pepitas and sunflower seed kernels over another large baking tray.

Step 9: Bake the tray in the oven, stirring its contents halfway through cooking, for 5 minutes or until lightly toasted.

Step 10: Remove they tray from the oven and set the tray aside to cool slightly.

Step 11: Combine the lime juice, soy sauce, sesame oil, garlic and sugar in a small jug. 

Step 12: Place the rice in a large bowl. Drizzle it with the lime-juice mixture and use a large metal spoon to gently stir until well combined.

Step 13: Add the rocket, pumpkin, pepitas and sunflower seed kernels to the rice mixture, gently stir until well combined, and serve!

In total, it takes 30 minutes to prepare the ingredients and 35 minutes to cook.
