So mouth-watering good!

Here's a question to ponder on before we get started:

Considering that they're both vegan,which one do you think is healthier: macaroons or chocolate?And why?

Crunchy, Chewy Flax & Almond Macaroons (Egg-Free)
Macaroons.You put one in your mouth,you chew it,and all the deliciously,juicy goodness flows out of its crunchy shells...

And now vegans can experience this heart-melting love as well!

This recipe takes 20 minutes of preparation time and 25 minutes of cooking time.

Ingredients(for 15 servings aka 30 cookies):
  • 7 tablespoons ground flax seed
  • 21 tablespoons water (1/3 cup with 1 tablespoon and 1 teaspoon)
  • 1 1/2 cups sugar
  • 5 tablespoons hot water (each tablespoon just shy of a full tablespoon)
  • 2 1/3 cups ground almonds
  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 10 drops almond essence
Directions:
  1. Whisk the ground flax seed and 21 tablespoons of water in a bowl and let it stand for at least 2-3 minutes before use.
  2. Using a hand mixer,beat the sugar and 5 tablespoons of hot water together in a large bowl for 2-3 minutes(allows some of the sugar to "melt").
  3. Gradually add the flax mixture from step 1 and all the remaining ingredients and mix well.
  4. Grease and flour a cookie sheet before placing the mixture in as 1 inch-wide balls of dough,each ball approximately 1 1/2 inches apart from each other.
  5. Bake them at 350F(176.67C) for 25-30 minutes.Remove promptly to a wire rack and eat whenever you want!
Side note: If you want them to be chewy,do not allow them to brown at the edges,or they will be tough "nuts" to crack!
